Like many people, I've watched Jeopardy for years on and off, and my mom still has a rule about not calling while it's on. My uncle even appeared on the original recipe Jeopardy and won (named his dog Jeopardy in its honor, named the cat Chespeake for the answer he lost on). So Alex Trebek's just always been there.
Having now read his autobiography I can say he comes across just like he does on TV, like a great guy. He seems like he's always appreciated the good fortune he's had in life, whether it was a fun kitchen to hang out in growing up or a chance to travel around. He doesn't do things in a loud way--his good deeds are like his gentle advice to the world in the book, gentle. The world lost something with him!
